So rather than creating a two hour video why not give each keynote speaker 30 seconds to outline what their speech was about, have someone from your company frame the whole event (where we are, who’s there, the theme, the quality of the speakers, what they hope people take away from the day) and intercut that with some stunning broll shots (including the speakers on the stage) and then round it off with some vox pops from those in attendance?

This approach gives everyone a flavour of the day and the key content discussed. It’s also an excellent marketing piece to promote next year’s conference.
